- Harvest: All manual, double selection of the grapes, the first one in the vines,
and the second one in a selection table at the entrance of the winery

- Alcoholic fermentation: 15-20 days from the entrance of the grapes into the deposits
- Natural and spontaneous starting of the malolactic fermentation
- Ageing Details:
- Time in barrels: 15 months
- Sort of barrels: French oak allier barrels
- Bottled in February 2001
- Number of Bottles: 22.640 (numbered bottles from 1 to 22.640)
- Complementary details: because of the correct balance of the grapes in the plants
(acidity degree/sugar) the philosophy of valsardo concerning the wines is the following:
Contain no additives, are not clarified, are not passed through a cold system,
are not filtered

Tasting Note
Brilliant red-garnet hue with a hint of ruby. Rich aromas with a moderately mellow red fruits.
Very flavourful palate with great complexity and fine cut. Exhibits great length, well-balanced
in the mouth. Wine to drink very well now though allows long term cellar.
