- Variety: 90% Tempranillo - 10% Cabernet Sauvignon and Merlot
- Origin of the Grapes: Grapes from the property vines, planted in 1986
- Harvest: All manual, double selection of the grapes, the first one in the
vines, and the second one in a selection table at the entrance of the winery
- Elaboration:
- Alcoholic fermentation: 15-20 days from the entrance of the grapes into the deposits
- Natural and spontaneous starting of the malolactic fermentation
- Ageing details:
- Time in barrels: 18 months
- Sort of barrels: french oak allier barrels
- Bottled in august 2000
- Number of bottles: 12.000 (numbered bottles from 1 to 12.000)
- Complementary details: because of the correct balance of the grapes in the plants
(acidity degree/sugar) the philosophy of valsardo concerning the wines is the following:
Contain no additives, are not clarified, are not passed through a cold system,
are not filtered

Tasting Note
Brilliant deep cherry-red hue. Gliceric in the mouth, full-bodied palate, opulent and intense.
Structured tannins with deeply fruity flavours. Extremely lengthy with excellent balance. Its
complexities are fascinating. Simply delicious already but a long-term cellar candidate.
