- Origin of the Grapes: Grapes from the property vines, planted in 1986
- Harvest: All manual, double selection of the grapes, the first one in the vines,
and the second one in a selection table at the entrance of the winery
- Elaboration:
- Alcoholic fermentation: 15-20 days from the entrance of the grapes into the deposits
- Natural and spontaneous starting of the malolactic fermentation
- Ageing Details:
- Time in barrels: 24 months
- Sort of barrels: French oak allier barrels
- Bottled in January 2004
- Number of Bottles: 28.000 bordelaise bottles and 1.000 Magnum (all numbered bottles)
- Complementary details: Because of the correct balance of the grapes in the plants
(acidity degree/sugar) the philosophy of valsardo concerning the wines is the following:
Contain no additives, are not clarified, are not passed through a cold system,
are not filtered

Tasting Note
Deep cherry-red with saturated violet garnet hue. Aroma of high intensity with ripe fruits, balsamic,
spicy and fine toasted wood notes. Good acidity in the mouth with a lot of fruit and a great length.
