- Origin of the Grapes: Grapes from the property vines, planted in 1986
- Harvest: All manual, double selection of the grapes, the first one in the
vines, and the second one in a selection table at the entrance of the winery
- Elaboration:
- Alcoholic fermentation: 20 days from the entrance of the grapes into the deposits
- Natural and spontaneous starting of the malolactic fermentation
- Ageing Details:
- Time in barrels: 22 months
- Sort of barrels: French oak allier barrels
- Bottled in October 2000
- Limited production, numbered bottles: 5.642 Bordelaise bottles and 1.000 Magnum
- Complementary details: Because of the correct balance of the grapes in the plants
(acidity degree/sugar) the philosophy of valsardo concerning the wines is the following:

Tasting Note
Red-garnet hue with a hint of ruby. Intense aromas, great complexity and fine cut, balsamic and
eucalyptus bouquet assembled with the variety aromas. Well balanced, structured and full-body
palate. Elegant and extremely persistent.
